Chocolate ... How much is in this word! Delicate, sweet, bitter, viscous - this is the embodiment of pleasure. These are fingers coated with chocolate, this is a friendly conversation, this is a sweet kiss and the wish "Let everything be in chocolate!" We invite you for a cup of J chocolate and share his homemade recipe.

I have always loved chocolate. Different. In childhood, it is standard milk, in adulthood - bitter. I remember that in my half-starved student years, they came out tortured from lectures and ran to a stall for chocolates, the brain required glucose and magnesium. I did not even dream of learning the profession of chocolatier then.

But I always dreamed that I would have a hobby like all normal girls. Everyone around me was busy with something in their free time: sewing, knitting, embroidering, drawing. My soul did not want to accept such a pastime, but actively demanded something calm and meditative as opposed to the boiling energy of the body.

Most interestingly, my new profession of nutritionist led me to my fascinating hobby of chocolate. The desire to get to the bottom of the components of each product made me reconsider my views on chocolate ingredients and introduced me to very interesting people, professionals in their field. Some of them know the secrets of artisanal and raw chocolate, some about how to make chocolate products from superfoods, and some share their knowledge of how to make beautiful and delicious candies with their own hands.

Today I want to share  my findings , namely:

Types of chocolate

Commercial dairy.

Bitter commercial.

Craft.

Raw.

Self made.

Commercial milk chocolate

Contrary to advertising, it does not carry any benefit, especially for children. It contains a large amount of sugar, cheap powdered milk and, more often than not, a long list of substances that are not very beneficial to the body.

Bitter commercial chocolate

It has the right to life if the ingredients contain only cocoa mass / cocoa powder, cocoa butter, sugar. More cocoa and less sugar are desirable. There may also be lecithin and spices. The longer the list of ingredients, the less chocolate it contains.

Craft chocolate

One of the best varieties. Chocolate goes from cocoa beans to bar in one production, processing is minimal, which allows you to maximize the preservation of useful qualities. Now there are many types of artisan chocolate: with honey, with spices, with various types of sugar, absolutely no sweeteners. Easy to choose according to your taste!

Raw chocolate

The most controversial variety. The adherents of raw chocolate talk about its benefits, which is well founded - the less processed the product, the more microelements, enzymes and bioflavonoids are stored in it. On the other hand, many professional chocolatiers argue that raw ingredients in production can never be. The fact is that to create a chocolate bar, cocoa beans must go through a series of treatments that involve heating above 45 degrees. In addition, raw cocoa beans can be a source of mycotoxins and other pathogens dangerous to humans. However, companies that make raw chocolate ingredients exist. They claim that they only use organic cocoa beans, which undergo all the necessary processing, not exceeding the required temperature. None of these factories reveal all the secrets of production. There is no definite answer here, so if you prefer raw chocolate, always ask which manufacturer's ingredients were used and give preference to large factories that have all the necessary certificates.

Handmade chocolates and candies

One of the most beautiful varieties, in my opinion. It comes from industrial ingredients and is completely handmade. Of course, the second option is tastier, since industrial ingredients make these chocolates and sweets very similar to commercial ones. The advantages of this chocolate are also that it can take and retain almost any shape, which allows you to make very beautiful and varied chocolates, as well as a variety of decorations, for example, for cakes.

Natural chocolate recipe

This recipe is easy to make at home without special tools.

You will need:

1. cocoa mass / cocoa mass - 200 gr.,

2. cocoa butter - 100 gr.,

3. icing sugar - 100 gr.

4. You can use any kind of sugar or substitutes such as xylitol or sorbitol powder. As a filler, you can
     also add various spices to taste, nuts and freeze-dried berries.

Recipe:

Grind cocoa butter and cocoa mass, place them in a dish convenient for a water bath and melt, then add sugar, spices and other ingredients, mix well, pour into molds and refrigerate for 20-30 minutes.

Your homemade chocolate is ready. Enjoy your meal!
